The Best Spicy Peanut Sauce Recipe, according to my husband

Spring rolls are quickly becoming one of my favorite meals. They are quick, delicious, and a fun dish to make. The possibilities are endless in creating these wrapped up mini salads. It can be as complex or as simple you like. Along with fresh spring rolls is a tasty peanut sauce.

The peanut sauce can make or break an average spring roll. Here’s our go to peanut sauce recipe. You can also thin it out more to double as a salad dressing!

As far as making the spring rolls. Almost anything you like can go into them. Just like pancakes the first few are ok but still edible. 😉 Practice makes better rolls.

Ingredients you can use for stuffing your roll:

  • shredded carrots
  • cabbage (try purple
  • edible flowers
  • rice noodles
  • cucumbers
  • protein of your choice
  • herbs, we love cilantro, mint, and green onions
  • sweet/hot peppers
  • any greens you use for salad
  • mushrooms
  • microgreens

Tips when making your rolls.

  • Cut your ingredients into manageable pieces. I like to make them into matchsticks.
  • I premoisten the wrap with cold or tepid water. This will give you some extra time to roll by allowing the wrap to moisten a litter slow than dipping then into warm water.
  • Buy precut ingredients and your choice of precooked protein to help cut down the prep time.
  • The rolls will dry out quick and is best to eat them as you make them. If you plan on making them ahead of time, wrap them individually in plastic wrap.
  • Make them appetizing by adding lots of colorful veggies!
  • Wrap them as tight as you can being careful to not tear the wrapper.
  • Use ingredients that do not contain too much moisture, as it will further moisten the rice paper and cause it to tear open.

When eating a spring roll, it’s important to have a great dipping sauce. The typical one in most cases is a peanut sauce, made with, you guessed it, peanut butter. It’s a combination of salty, sweet, and acidity. We like our sauces with a little spice, but not overwhelming that it takes over after a few bites so this recipe incorporates a little bit of heat.

Peanut Sauce Recipe

Ingredients:
2 Tbsp Creamy Peanut Butter
1 Tbsp  Garlic, minced
1/2 Tbsp Ginger, minced
1 Tbsp Soy Sauce
2 Tbsp Hot Sauce
2 Tbsp Honey
2 Tbsp Lime juice
1 Tbsp water 

Mix all the ingredients except for the water. Once mixed, add the water slowly to your desired consistency.
