When anyone is sick or when it’s cold outside, Arroz Caldo is the soup we make in our home. It has ginger that is known to help with immunity, so I like to put lots of that.
The toppings for the soup is essential and add a lot of flavor to the finished dish, so don’t skimp on those. Traditionally, calamansi or calamondin is used as the acid but lemons or limes work fine.
Ingredients:
- 1 cup Rice, uncooked
- 1 medium Onion, diced
- 4 Garlic cloves, minced
- 2 Lbs Chicken wings
- 1” ginger, sliced
- 3 Tbsp Ginger, minced
- 4 cups, Chicken broth
- Salt & pepper
- Garlic powder
Toppings:
- Fried minced Garlic
- Green onions, chopped
- Hard boiled eggs, chopped
- Calamansi or Lemons
- Fish sauce (optional)
Instructions
Heat large skillet over medium-high heat. Once hot, add the oil then chicken. Brown the chicken for a few minutes then add the onions, garlic, and sliced ginger. Stir in salt, pepper and garlic powder. Cook for a minute or until the onions are translucent.
Add the rice. After about a minute add the chicken broth. Stir every few minutes until the rice has cooked and started breaking. Add the remaining minced ginger and cook for another 5 minutes.
Serve with toppings.
